This mint Aero fudge is the BEST you'll ever try! It's made with just a small handful of ingredients and is super easy to make. It's packed full of mint chocolate flavour, Aero bars and mint Aero bubbles!

I'm on quite a fudge kick at the moment as you may have seen from my previous posts. Next on the list is this tasty green mint Aero fudge. It's thick and creamy with a delicious dose of mint chocolate in every bite.

Ingredients you'll need
Here's everything you'll need to make this white mint chocolate fudge:
- White chocolate: Mint Aero is made with milk chocolate but I wanted to use white chocolate for this fudge so that the mint could slightly overpower the chocolate flavour. You can use any type of chocolate you like- even the cheapest chocolate will work as long as you melt it gently.
- Condensed milk: Make sure to use the sweetened type of condensed milk for this recipe. You'll need one 397g can, or 14oz.
- Peppermint extract: This seriously takes the fudge to the next level! I added peppermint extract to give a stronger mint flavour and the white chocolate took it on perfectly. I used ½ a teaspoon but you can use a full teaspoon if you want it to have a stronger flavour.
- Green food colouring: This is totally optional but I think it makes the fudge really look the part! Start with a few drops and add more as needed until you get your desired shade of green. I'd recommend using gel food colouring instead of liquid, as the latter can cause the mixture to seize up.
- Mint Aero bars and bubbles: I added some Aero bar pieces and mint Aero bubbles into the fudge and some on top. I thought this gave a really nice texture and flavour. The milk chocolate also melted into the fudge a little bit, creating a beautiful swirly mint chocolate pattern.
Equipment
- 8x8-inch square tin: Use this size of tin for thick slices. It gives the fudge the perfect height, and you can cut it into about 30 small pieces. If you don't mind thinner pieces, try an 8x10-inch tin or a loaf tin instead. You can also use my cake pan converter to adjust the recipe to fit your tin.
- Baking paper: Baking paper is essential to use when making fudge, otherwise it'll get stuck to the tin. I recommend trying to leave a little bit hanging over the edges which makes it super easy to remove.
- Saucepan: For melting the fudge ingredients. Keep the heat low or if you prefer, make a bain marie. You can do this by gently simmering water over the stove on low heat, then placing a heatproof bowl over your saucepan. The bottom of the bowl shouldn't be touching the water. This allows you to melt the ingredients super gently and slowly to prevent burning.
- Heatproof bowl: You'll need this if you're using a bain marie or if you want to melt the fudge in the microwave. You don't want bowls melting or cracking when you're in your flow!
- Wooden spoon: I find a wooden spoon is better than any other utensil for mixing the Aero pieces into the fudge.
- Rubber spatula: When I first started making fudge, I couldn't figure out for the life of me how to spread it out into the tin without it sticking to my spoon. It turns out a rubber or silicone spatula is what you need! This isn't totally essential but it is super handy.
- Sharp knife: Last but not least, you'll need a sharp knife to cut the Aero bars and also to cut the fudge into pieces.

How to make mint Aero fudge
Step 1: Line your tin with baking or parchment paper. This will save you from fiddling around when the fudge is ready to go in the tin.
Step 2: Roughly chop 4 Mint Aero bars into pieces and set aside.
Step 3: Break 450g of white chocolate into squares. Put it in a bowl or saucepan with 1 tin (397g) of condensed milk in a heatproof bowl.
Step 4: Place the saucepan over low heat on the stove, or place your bowl over a saucepan of gently simmering water to create a double boiler. Stir gently until the chocolate has melted fully and the mixture becomes thick.
If you'd like to use the microwave, make sure to take it out every 20 seconds to give it a good mix- this will prevent it from burning or seizing.
Step 5: Remove it from the heat and add a few drops of green gel food colouring and ½ teaspoon of peppermint extract. Mix well.
Step 6: Now mix in half a bag of Mint Aero bubbles and half of the chopped Aero bars.

Step 7: Transfer the fudge to your lined tin and press into place. Top with the remaining Aero bubbles and bar pieces.

Step 8: Place it into the fridge for 4 hours until firm then cut into squares and enjoy! You can get 30 small pieces or 12 very large ones out of this recipe.
Top tips
- Keep the heat super low when melting the fudge. White chocolate can be tricky to work with and is more prone to seizing and splitting than other types of chocolate.
- Use both chopped mint Aero bars and Aero bubbles for the best look, flavour and texture.
- Add an extra ½ teaspoon of peppermint extract for a stronger mint flavour.
- White chocolate can be swapped for equal amounts of semi-sweet or milk chocolate. Omit food colouring if swapping.
FAQs
This fudge can be stored in an airtight container in the fridge for up to 2 weeks. You can store it at room temperature if you prefer the texture but it won't last quite as long.
Yes, this green fudge freezes really well. Pop the pieces into an airtight container and freeze for up to 2 months. To defrost, transfer it to a plate or wire rack and let it sit at room temperature for an hour or so. Do not refreeze.

Ingredients
- 450 g White chocolate (16oz)
- 397 g Sweetened condensed milk (14oz)

Instructions
- Line an 8x8 tin with baking paper. This will make it easy to remove the fudge from the tin once it's set.
- Break up the white chocolate and add it to a saucepan with the condensed milk.
- Place the saucepan over low heat on the stove and stir gently until the chocolate has melted. The mixture should be quite thick.
- Remove from the heat and quickly stir in the peppermint extract and green food colouring.
- Mix in half of the Aero bar pieces and half of the Aero bubbles. The chocolate should begin melting and create a nice swirly pattern!
- Transfer the fudge mixture to your lined tin and press into place. Top with the remaining Aero bar pieces and bubbles.
- Refrigerate for 4 hours until firm, then cut into squares and enjoy.
