This mint Aero fudge is the BEST you'll ever try! It's made with just a small handful of ingredients and is super easy to make. It's packed full of mint chocolate flavour, Aero bars and mint Aero bubbles!

I'm on quite a fudge kick at the moment as you may have seen from my previous posts. Next on the list is this tasty green Aero mint fudge. It's thick and creamy with a delicious dose of mint chocolate in every bite.

Ingredients you'll need
Here's everything you'll need to make green fudge with white chocolate and mint:
- White chocolate: Mint Aero is made with milk chocolate but I wanted to use white chocolate for this fudge so that the mint could slightly overpower the chocolate flavour. You can use any type of chocolate you like- even the cheapest chocolate will work as long as you melt it gently.
- Condensed milk: Make sure to use the sweetened type of condensed milk for this recipe. You'll need one 397g can, or 14oz.
- Peppermint extract: White chocolate mint fudge perfection! I added peppermint extract to give a stronger mint flavour and the white chocolate took it on perfectly. I used ½ a teaspoon of peppermint extract but you can use a full teaspoon if you want it to have a super strong mint flavour.
- Green food colouring: This is totally optional but I think it makes Aero mint fudge really look the part! Start with a few drops and add more as required. If you're using gel or paste colouring, make sure to mix it with equal amounts of oil first, to stop the chocolate from seizing.
- Mint Aero bars and bubbles: I added some Aero bar pieces and mint Aero bubbles into the fudge and some on top. I thought this gave a really nice texture and flavour. The milk chocolate also melted into the fudge a little bit, creating a beautiful swirly mint chocolate pattern.
Equipment
- 8x8-inch square tin: For Mint Aero fudge perfection, use this size of tin. It gives the fudge the perfect height, and you can cut it into about 30 small pieces. If you don't mind thinner pieces, try an 8x10-inch tin or a loaf tin instead.
- Baking paper: Baking paper is essential to use when making fudge, otherwise it'll get stuck to the tin. I recommend trying to leave a little bit hanging over the edges which makes for super easy removal.
- Heatproof bowl: Whether you're making this fudge in the microwave or over the stove, a heatproof bowl is important. You don't want bowls melting or cracking when you're in the middle of making fudge.
- Saucepan: If you're melting the ingredients over the stove, I recommend using a homemade bain marie or double boiler. You can do this by gently simmering water over the stove on low heat, then placing your heatproof bowl over the saucepan. The bottom of the bowl shouldn't be touching the water. This allows you to melt the ingredients super gently and slowly to prevent burning.
- Wooden spoon: I find a wooden spoon is better than any other utensil for properly mixing mint chocolate fudge and adding the Aero pieces.
- Rubber spatula: When I first started making fudge, I couldn't figure out for the life of me how to spread it out into the tin without it sticking to my spoon. It turns out a rubber or silicone spatula is what you need! This isn't totally essential but it is super helpful.
- Sharp knife: Last but not least, you'll need a sharp knife to cut the Aero bars and also to cut the fudge into pieces.

How to make mint Aero fudge
Here's how to make green Aero mint fudge in just a few easy steps:
Step 1: Line your tin with baking or parchment paper. This will save you from fiddling around when the fudge is ready to go in the tin.
Step 2: Chop 4 mint Aero bars into pieces and set aside.
Step 3: Break 450g of white chocolate into squares. Put it in a bowl with 1 tin (397g) of condensed milk in a heatproof bowl.
Step 4: Place the bowl over a saucepan of gently simmering water on the stove to create a double boiler. Stir gently until the chocolate has melted fully and the mixture becomes thick.
Step 5: Remove it from the heat and add a few drops of green food colouring and ½ teaspoon of peppermint extract. Mix well.
Step 6: Now mix in 1 bag of Mint Aero bubbles and half of the chopped Aero bars.

Step 7: Transfer the fudge to your lined tin and press into place. Top with the remaining Aero bubbles and bar pieces.

Step 8: Put the fudge into the fridge for 4 hours until firm. Then cut into squares and enjoy!
Top tips
- Use both chopped mint Aero bars and Aero bubbles for the best look, flavour and texture.
- Add an extra ½ teaspoon of peppermint extract for a stronger mint flavour.
- If using a gel or paste colouring, mix with an equal amount of oil before adding it to the fudge mixture to prevent it from seizing.
- White chocolate can be swapped for equal amounts of semi-sweet or milk chocolate. Omit food colouring if swapping.
FAQ
I recommend using a double boiler to prevent burning but if you're really careful, you can make Aero mint fudge in the microwave. Make sure to use a heatproof bowl and stir it every 20-30 seconds or so until the chocolate is just melted.
This fudge can be stored in an airtight container in the fridge for up to 2 weeks. You can store it at room temperature if you prefer the texture but it won't last quite as long.
Yes, this mint green fudge freezes really well. Pop the pieces into an airtight container and freeze for up to 2 months. To defrost, transfer it to a plate or wire rack and let it sit at room temperature for an hour or so. Do not refreeze.

BEST Mint Aero Fudge
Ingredients
- 4 bars Mint Aero chocolate bars (108g/4oz total)
- 450 g White chocolate (16oz)
- 397 g Sweetened condensed milk (14oz)
- ½ Teaspoon Peppermint extract (or 1 teaspoon if you want a stronger mint flavour)
- Few drops Green food colouring (see notes)
- 180 g Mint Aero bubbles
Instructions
- Line an 8x8 tin with baking paper. This will make it easy to remove the fudge from the tin once it's set.
- Chop the Aero bars into small chunks and set aside.
- Break up the white chocolate and add it to a heatproof bowl with the condensed milk. Place the bowl over a pot of gently simmering water to create a double boiler.
- Stir gently over low heat until the chocolate has melted. The mixture should be quite thick.
- Remove from the heat and quickly stir in the peppermint extract and green food colouring.
- Mix in half of the Aero bar pieces and half of the Aero bubbles. The chocolate should begin melting and create a nice swirly pattern!
- Transfer the fudge mixture to your lined tin and press into place. Top with the remaining Aero bar pieces and bubbles.
- Refrigerate for 4 hours until firm, then cut into squares and enjoy.
