    Mint Aero Rocky Road

    This Mint Aero rocky road is super easy to make with simple ingredients and there's no baking required! It's filled with Mint Aero bar pieces, Mint Aero Bubbles, mini marshmallows and digestive biscuits, making an indulgent yet refreshing dessert that everyone will enjoy.

    I'm back with another recipe! Since my Mint Aero fudge, tiffin and cheesecake recipes have been so well received, I thought I'd share my Mint Aero rocky road recipe too. I'm sure you're going to love it!

    With only 7 simple ingredients, you can whip up this delicious treat with only 10 minutes of prep time. There's no baking required so all you need to do is mix the ingredients together, press them into a tin then sit back and let the fridge do the rest of the work. It couldn't be easier!

    If you've never made rocky road before, you'll find in-depth notes and instructions below, along with top tips and step-by-step photos. I hope you find it helpful. For those of you who prefer the quick, TLDR version, just skip on ahead to the recipe card at the end of the post. Enjoy!

    Ingredients

    Here's everything you need to make Mint Aero rocky road...

    • Semi-sweet chocolate: I recommend using semi-sweet chocolate for this recipe, which is essentially just cheaper dark chocolate, the type with a lower cocoa content. Darker chocolate will work too but will make the rocky road taste more bitter. I typically like to use Asda Just Essentials 'dark' chocolate.
    • Unsalted butter: Butter will make the finished rocky road a little easier to cut plus it will add a delicious buttery flavour. I like unsalted butter but feel free to use salted if you prefer.
    • Golden syrup: Golden syrup will help bind the chocolate and butter together, preventing splitting or seizing, and will make the texture slightly softer.
    • Digestive biscuits: These classic biscuits will add a nice crunch to your rocky road. You can swap them out for any other type of biscuit that you like but biscuits with a neutral flavour will taste best paired with the mint.
    • Mint Aero: I used 1 share bar of Mint Aero chocolate and 1 share bag of Mint Aero Bubbles. Feel free to switch up the quantity of each- as long as you don't have more than 271g total then it'll work fine.
    • Mini marshmallows: Of course, we can't have Mint Aero rocky road without some marshmallows! I used 80g which gave a nice touch of chewiness and extra sweetness without being overpowering.

    Equipment

    As well as the ingredients, you'll also need the following equipment...

    • Kitchen scale: Most of my recipes are measured in grams so you'll need a food scale to make this one.
    • Baking tin: A deep 8x8-inch tin or a regular 8x10-inch tin will work best for this recipe. If you want to use a larger tin, I'd recommend increasing the quantities too, to prevent thin slices. You can use my cake pan converter to do this.
    • Bowl and utensils: You'll need a large mixing bowl, a wooden spoon and a sharp knife. You can also use a rubber spatula to press the mixture into the tin if you have one- it won't stick to the mixture as much as a wooden spoon will.
    • Saucepan: To melt the chocolate, butter, and golden syrup together. Make sure to use low heat!
    • Baking paper: For lining the tin, making it easier to remove the rocky road once set.

    How to make Mint Aero rocky road

    Ready? Let's get started!

    Step 1: First, start by getting the tin ready for your rocky road mixture. Line an 8x8x3-inch or 8x10-inch tin with baking paper, leaving a little bit hanging over the edges. Set it to one side for now.

    Step 2: Next, melt the chocolate mixture. Add 300g of semi-sweet chocolate, 100g of unsalted butter, and 3 tablespoons of golden syrup to a saucepan. Place the saucepan over low heat and stir gently until there are no lumps of butter or chocolate left. Remove it from the heat and set it aside to cool for about 10 minutes.

    Step 3: Next, add 80g of digestive biscuits to a large bowl and crush them into medium-sized chunks. You can do this with your hands or use the end of a heavy-bottomed rolling pin.

    Step 4: Break 1 share-sized Mint Aero bar (90g) into small segments and add it to the bowl along with a (181g) bag of Mint Aero bubbles and 80g of mini marshmallows. Mix well to combine.

    Step 5: Now let's mix it all together! Pour the cooled melted chocolate mixture over the dry ingredients in the bowl and mix thoroughly until all the ingredients are evenly coated with the chocolate mixture.

    Step 6: Transfer the rocky road mixture to your lined tin and press it down firmly using the back of a spoon or a spatula. Try to make sure it's even and compact to prevent wonky or crumbly slices.

    Step 7: That's all the hard work done, now all you need to do is pop it in the fridge! Place your rocky road in the fridge for at least 3 hours or until it's firm to the touch. Then just remove it from the tin, cut it into slices and enjoy!

    Top Tips

    • Leave the melted chocolate mixture to cool for 10 minutes before you add it to the bowl. If it's too hot, it will cause the Aero and marshmallows to melt and may cause the mixture to seize.
    • If you don't have a saucepan on hand, you can melt the ingredients in a heatproof bowl in the microwave instead. Just make sure to take it out and stir it every 20-30 seconds to prevent it from seizing.

    FAQ

    How long does Mint Aero Rocky Road last?

    This recipe will last for up to two weeks in an airtight container. You can keep it in the fridge or in a cool, dry place such as a kitchen cupboard, but I personally prefer the texture when it's chilled.

    Can I make this recipe gluten-free?

    Yes, all you need to do is substitute the digestive biscuits with a gluten-free alternative. All of the other ingredients are naturally gluten-free!

    Can I freeze it?

    Yes, you sure can! Just place the rocky road into airtight containers and freeze for up to 3 months. You can add small pieces of baking paper between slices so they don't stick together in the freezer. When you're ready to enjoy them, leave them to thaw in the fridge overnight or at room temperature for an hour or two. Do not refreeze.

    • Pour the melted chocolate into the bowl and mix until everything is evenly coated. Transfer it to your lined tin and press down firmly into place.
    • Refrigerate for 3 hours then cut into squares and enjoy!
