Welcome to Eat Cook Bake - Your new favourite dessert blog!

I'm Chloe… the baker, blogger and brownie lover behind Eat Cook Bake. I live in Scotland with my fiancé, where I spend most of my time dreaming up new dessert recipes and traybake ideas. I write all of my posts with beginner home bakers in mind, because there's nothing worse than following a recipe only to get completely lost halfway through (or worse, realising it's an AI recipe!). I try my best to explain the why behind each step and keep things as straightforward as possible.
My baking journey
I started baking when I was about 10 years old, after years of watching my great granny whip up the *best* pancakes and sweet traybakes you could ever imagine. She made it look so effortless and I always dreamed about baking like her.
My first experience of baking for others was when I sold my very first cupcakes (these butterfly cakes) at a car boot sale. I was super proud of those wonky little cakes and it fueled my love for baking even more.
Over the years, I kept baking, experimenting, failing (a lot), and learning. I never went to pastry school or had any professional training, but I baked a lot. I was constantly trying new things, watching YouTube videos and reading blogs, and slowly but surely, I began creating (and eventually perfecting) my own recipes. Here are some of my early bakes:

In 2018, I launched my first recipe site, Baked by Clo, and went full-time with blogging in 2022. Over the years, I learned a lot about the science behind baking, and that gave me the confidence and knowledge to start a second blog but make it even better.
In 2024, I launched Eat Cook Bake, posting my Mars Bar traybake as my first recipe. This blog became a place for me to share dessert recipes that I truly love- mostly my beloved old school traybakes and lots of nostalgic treats. Think low-effort, high-reward! If it doesn't come together quickly or it needs complicated or expensive ingredients, it's not going on my blog. I don't usually post things like sourdough starters or professional patisserie recipes on my blog, but I'll always have plenty of reliable, well-tested desserts that are perfect for low-key parties, bake sales, rainy weekends, or just a Friday night sweet treat to enjoy with the family.
Why I do what I do
Baking has always been a way for me to relax and switch off from the world, and I really want to help others to be able to do that too. It's a great creative outlet, a fun challenge, and a way to show love to others, whether that's baking some brownies for a family birthday or making a nice traybake cake for a local fundraiser.
My blog was born from that love of baking, and from a natural preference for communicating in writing as a shy twenty-something. In my early thirties I was diagnosed as autistic, and it suddenly became obvious why blogging had always felt like a dream job for me. It combines my love of written communication with my most favourite hobby, and lets me work on my own schedule at my own pace. I feel so incredibly grateful that I get to do this for a living!
A few more things about me
- I still LOVE to travel and used to travel solo before meeting my now fiancé, Luis. I took my first solo trip at age 19 and have visited over 30 countries since. Berlin, Canada and Portugal are some of my fave places so far!

- Aside from dessert, my favourite food is anything Asian- especially sushi and spicy ramen.
- I enjoy running and lifting. It helps balance out all the sweet treats!
- Growing up, I always wanted to be an author and I used to write 'books' filled with stories about my gran's dog Sandy, lol. It's still a huge dream to publish a book one day, but it'll probably be a baking one!
- I am ALWAYS down for a nap. On a weekend, you can usually find me in loungewear, watching reality TV, with a cup of tea (and probably a cookie or two) in hand.
