Ingredients list
3 Ingredients is all you need for this fudge...
- Condensed milk: Sweetened condensed milk is the one you need for fudge. Don't get it confused with evaporated milk.
- White chocolate: Any white chocolate will work for this recipe. I like to use the cheap supermarket own-brand to save money but you can use any kind that you like.
- Skittles: I used 1 bag of Skittles for this fudge. A standard-sized bag in the UK is 152g but absolutely feel free to use more than this if you want to!
Equipment
Here are all the tools you'll need for this recipe...
- 8x8-inch tin: Use this tin for the perfect fudge thickness! A larger tin will result in thinner pieces. If you're in a pinch, you can also use a loaf tin and cut the fudge into slices rather than squares.
- Baking paper: This will stop the fudge from sticking to the tin. I usually leave a little bit hanging over each edge so I can just lift it out easily later on.
- Heatproof bowl: To make the double boiler (see more details in the next section). I like to use a glass Pyrex bowl.
- Saucepan: A medium saucepan that is just the right size for your bowl to sit on top of without falling in.
- Utensils: A wooden spoon for mixing and a sharp knife for cutting the fudge once it has set. I also like to use a rubber spatula to press the fudge into the tin because it doesn't stick to it the way that a wooden spoon does.
How to create a double boiler
If you don't have a double boiler at home, don't worry. You can make your own easily with just a pot and a heatproof bowl.
All you need to do is place a small amount of boiling water into the bottom of a saucepan then sit a heatproof bowl on top. I typically use a medium saucepan and a large glass bowl.
The bowl should not sit in the saucepan but it should sit snugly on top with a gap between the bottom of the bowl and the water. This gap will allow the steam from the hot water to rise, heating the chocolate very slowly. Don't let the water touch the bowl as this may cause your bowl to crack.
How to make Skittles fudge
All set? Let's make some fudge!
Step 1: Break up 450g of white chocolate and place it into your double boiler with 1 tin (397g) of condensed milk.
Step 2: Turn the heat to medium-low and slowly stir until the chocolate has fully melted. The mixture should look thick and glossy.
Step 3: Remove the fudge from the heat and stir in 150g of Skittles, saving a few for the top if you like.
Step 4: Spoon the fudge into your lined tin and press it out evenly, all the way to the edges. If it's sticking to your spoon, use a rubber spatula to make it easier to spread it out.
Step 5: Refrigerate your fudge for 4 hours, or until it's firm to the touch. Then remove it from the tin, cut into squares and enjoy!
Microwave option
If you don't fancy faffing around with saucepans and double boilers then you can also make this fudge using your microwave.
To do so, put the broken-up chocolate and condensed milk in a heatproof bowl. Put it in the microwave in 30-second bursts, stirring between each burst until the chocolate has fully melted. Then just follow the rest of the instructions as normal in the recipe.
Skittles fudge tips
- Work quickly after you remove the pan from the heat as the fudge will start to set quite quickly.
- You can add food colouring to the fudge to make it look like the rainbow too! If you're using liquid or gel colouring, make sure to mix it with an equal amount of vegetable oil first, which will stop the mixture from seizing up.
- Fold in the Skittles gently to prevent colour bleeding.
- For a cleaner look, use a warm knife to cut your fudge. You can warm your knife up by dipping it into boiling water before cutting. Make sure to dry it thoroughly with a dishcloth first!
FAQ
Yes, you can freeze it for up to 3 months in an airtight container. Alternatively, you can freeze the whole slab of fudge on a baking tray until solid then wrap it up tightly in clingfilm before returning it to the freezer. When you're ready to defrost it, just transfer it to the fridge overnight. Do not refreeze.
If you keep it in the fridge in an airtight container, it'll last for at least 2 weeks. It can hold up fine at room temperature too but won't last quite as long.
It depends on how big or small you want your fudge pieces to be. I typically slice mine up into 30 squares but you can get up to 40 small pieces or 12 larger pieces. It's totally up to you!
