Taste the rainbow with these delicious Skittles cookies! With a piece of chewy, fruity candy in each bite, these cookies are going to be a hit with both kids and adults. They’re great for parties, pride events, bake sales or simply snacking on when you’re in the mood for something sweet!
Have you ever wondered what Skittles would taste like in a cookie? Because me too. I’ve made plenty of other flavours of cookies in the past but until now, I’d never tried making cookies with Skittles (or any other fruity candy) instead of chocolate.
I am pleased to report that the result was absolutely delicious. The individual Skittles flavours really shine through and their chewy texture compliments the cookies perfectly.

Ingredients
- Butter: Use softened butter for these Skittle cookies for easy mixing. I also recommend cutting it into cubes. To soften it, simply let it sit out at room temperature for an hour or two before you start baking.
- Caster sugar: Caster sugar is almost the same as regular white sugar- its texture is somewhere in between granulated and powdered sugar. Using caster sugar helps to give these cookies a nice smooth texture. If you’re struggling to find it, it can also be called superfine sugar.
- Brown sugar: Use soft light brown sugar for these cookies. It’s not quite as strong as dark brown sugar but still gives a nice caramel-like flavour.
- Vanilla extract: I added about 1 teaspoon of vanilla extract to these Skittles cookies.
- Egg: One medium egg is perfect for this recipe. This is for binding all of the ingredients together. For an egg-free version, you can use an egg substitute such as flax seeds mixed with water.
- Flour: Using self-raising flour saves the need to add any extra raising agents like baking soda or baking powder. It helps to create a light, fluffy texture in the centre of these cookies.
- Skittles: The star of the show, Skittles! I used 1 regular-sized bag for these cookies with Skittles but feel free to use more if you like.
Equipment
- Mixing bowl: You’ll need quite a large mixing bowl to make these cookies because there’s a large quantity of ingredients.
- Electric whisk or stand mixer: I like to use an electric whisk or stand mixer to mix the butter and sugar together. It can be done by hand but it’s a little tricky, so use an electric mixer if you can.
- Wooden spoon: To mix everything together. You can also use a baking spatula if you prefer.
- Baking trays: You’ll need one or two large baking trays to make Skittles cookies. You’ll only be able to bake 4-6 cookies at one time because they spread quite a lot while baking. It is best to only put one tray of cookies in the oven at a time anyway (to ensure they bake evenly) so don’t worry if you don’t have a second tray. Just make sure to let the cookies cool completely before you reuse the tray.
- Baking or parchment paper: Line your trays with baking or parchment paper to prevent them from sticking. Skip this if you’re using a non-stick cookie tray.
How to make Skittles cookies
Step 1: Preheat your oven to 180°C/350°F (or 160°C/325°F if you’re using a fan or convection oven).
Step 2: Line a large baking tray or two with baking paper. Set aside for now.
Step 3: Add 150g of softened butter, 130g of caster sugar and 100g soft light brown sugar. Mix well to create a thick paste. This can be a little difficult to do by hand so I recommend using an electric whisk or stand mixer to assist you.
Step 4: Next, mix in 1 egg and 1 teaspoon of vanilla extract to make a smooth mixture.
Step 5: Add 250g self-raising flour to the mixture and stir it in using a wooden spoon. When it’s starting to come together, use your hands to press it into a ball of dough.
If your dough is a bit wet or sticky, add more self-raising flour. If it looks dry or crumbly, add a small splash of milk to help to stick together.
Step 6: From 1 regular-sized bag of Skittles, set a handful aside for later. Put the rest of the Skittles into the cookie dough.
Step 7: Divide the dough into 12 pieces and roll each piece into a ball. Gently press them into discs that are around 1 inch thick.
Step 8: Place the Skittle cookies onto your lined tray, leaving 2-3 inches in between them to allow space for spreading.
Step 9: Bake for 11-12 minutes until the cookies are just beginning to turn golden at the edges. Do not keep baking them after this time! They will look underdone but just trust the process- they’ll firm up and turn golden brown as they cool down.
Step 10: While the cookies are still warm and gooey, gently press a few of the remaining Skittles on top of each one.
Step 11: Let the cookies cool completely before removing them from the tray. Then all that’s left to do is enjoy!
Top Tips
- If you want to add extra Skittles on top of the cookies, I recommend doing it after baking, while the cookies are still warm and gooey. If you add them beforehand, they are likely to crack or melt and don’t look quite as nice.
- Experiment with different flavour extracts or food colouring to take these cookies to the next level!
- Soft, chewy cookies with Skittles need to be slightly underbaked because they actually continue baking for a few minutes once they’re out of the oven! Resist the urge to keep baking them until they look “done” because they’ll end up burnt and crispy when they cool down.

You can store these for up to 5 days. I recommend keeping them in an airtight container at room temperature or a cool, dry place such as a kitchen cupboard.
You sure can! Skittles cookies are great for freezing and they defrost really well. To freeze them, wrap them tightly in clingfilm or tinfoil or place them into an airtight container. Freeze for up to 1 month. When you’re ready to eat them, transfer them to a plate or wire rack and let them sit out at room temperature for an hour or so. Do not refreeze.

Ingredients
- 150 g Butter (⅔ cup) softened at room temperature and cut into cubes
- 130 g Caster sugar (⅝ cups)
- 100 g Soft light brown sugar (½ cup)
- 1 Egg
- 1 Teaspoon Vanilla extract
- 250 g Self-raising flour (2 cups)
- 136 g Skittles (1 bag/4.7oz)
Instructions
- Preheat your oven to 180℃ (160℃ for fan ovens) and line two large trays with baking paper.
- Add the butter, caster sugar and brown sugar to a large bowl. Use a stand mixer or electric whisk to mix them together to create a thick paste.
- Next, add the egg and vanilla extract. Mix well until smooth.
- Stir in all of the self-raising flour. When it's starting to stick together, use your hands to press it into a ball of dough.
- Add the Skittles to the cookie dough, leaving a handful aside to top the cookies with at the end.
- Divide the dough into 12 equal-sized pieces and roll into balls. Lightly press on them with your fingers to make discs that are around 1 inch thick.
- Place the cookies onto your lined tray, leaving a couple of inches of space in between to allow for spreading. I recommend baking 4-6 per tray.
- Bake for 11-12 minutes until they are JUST starting to turn golden brown at the edges. They'll look underdone at first but will continue browning and firming up as they cool.
- While the cookies are still warm and gooey, gently press a few of the leftover Skittles onto each one. Doing this after baking rather than before prevents the Skittles from cracking or melting.
- Let them sit on the tray until completely cool before enjoying.
