Ingredient notes
- Milk chocolate: Any type of chocolate that you like will work well for chocolate bark. I personally just like to use the supermarket's own-brand chocolate.
- Walnuts: Of course, we will need some walnuts to make this recipe. I used regular, unsalted walnuts with nothing added to them but if you fancy being wild, you can use salted or candied walnuts instead.
- Sea salt: This is optional but adding a pinch of salt on top of your bark just takes it to the next level. Who doesn't love the sweet and salty combo?! Of course, if you use salted walnuts, skip the extra salt.
Equipment
- Baking tray: Any size of baking tray is fine because this bark will hold its shape pretty well on its own. You can make the bark slab as big or as small as you like.
- Baking paper: To stop the bark from sticking to the tray. You could also use lightly oiled foil or parchment paper if you're in a pinch, or switch out a metal baking tray for a silicone one.
- Heatproof bowl: Or a saucepan, to melt the chocolate in.
- Utensils: You'll need a tablespoon to mix and spread the bark ingredients and a sharp knife to cut it once set.
How to make chocolate walnut bark
Step 1: Start by lining a baking tray with baking paper. Set it to one side, ready for your bark to go on.
Step 2: Next, break 300g of milk chocolate into pieces then add it to a heatproof bowl. Put it in the microwave for 30 seconds then mix. Repeat until the chocolate is fully melted and there are no lumps left.
Alternatively, you can melt the chocolate over very low heat in a saucepan over the stove.
Step 3: Chop 100g of walnuts into chunks. You can set a few aside for the topping if you like.
Step 4: Add the walnuts to the melted chocolate and mix well until they're all evenly covered.
Step 5: Transfer the mixture to your lined tray and spread it out into a small rectangle. Top with leftover walnuts and a sprinkling of sea salt.
Step 6: Leave the bark out at room temperature for a few hours until set, then break or cut it into pieces and enjoy!
Chocolate bark tips
- If you're struggling to break or cut your bark after it's set, you can use a warm knife to do it. To warm your knife, run it under boiling water then dry it thoroughly before cutting. Repeat immediately before each cut.
- Let the bark set at room temperature if you can, especially if you plan to give it out as edible gifts. While setting it in the fridge will not affect the taste at all, it can cause a whitish appearance on top due to condensation.
- Add the walnuts in whole for a chunkier bark texture.
Toppings and mix-ins
If you want to make your bark a little more exciting, try adding one of the following into or on top of the mixture:
- Other nuts such as peanuts, pecans or almonds
- Mini marshmallows
- Salted pretzels
- Candies or cake sprinkles
FAQ
It'll keep well for up to 3 weeks if you store it in an airtight container. It can be stored at room temperature but in my opinion, it tastes best straight from the fridge!
You sure can. To freeze walnut bark, pop the slices into airtight containers or freezer bags and freeze for up to 3 months. To defrost it, let it sit out at room temperature for an hour or two. If you want to prevent the pieces from sticking together in the freezer, you can either pre-freeze them on a baking tray or you can separate them with pieces of baking paper.
Yes! Walnut bark will work well with any type of chocolate. Dark chocolate walnut bark does sound quite delicious!
