This chocolate pretzel marshmallow bark is just like rocky road in chocolate bar form! It's super easy with only 3 simple ingredients and you don't even need to turn your oven on to make it.
After a few weeks of posting rocky road recipes on the blog, I felt inspired to make this rocky road chocolate bark, filled with mini marshmallows and pretzels. It's a super easy alternative to traditional rocky road and it only takes about 5 minutes to make! It's so easy that even kids can help you make it!
This bark is perfect for edible Christmas gifting or snacking on at parties. It's sweet, salty and crunchy with a nice chew from the marshmallows. Every time I make this, it gets eaten up within minutes!

Ingredients and equipment
Here's everything you need to make pretzel marshmallow bark...
- Milk chocolate: Any brand of chocolate will work for this recipe because all you need to do is melt it. I recommend using bars instead of chips as they'll melt a little better.
- Pretzels: The crunchy, salted type. I used Penn State pretzels.
- Marshmallows: Mini marshmallows are a must for rocky road chocolate bark! I used plain white ones but pink ones would add a nice pop of colour if you have them.
- Baking tray: Any size will do- you can make your bark as thin or as thick as you like.
- Baking paper: To stop the chocolate from sticking to the tray.
- Heatproof bowl: For melting the chocolate in. You can also do this in a saucepan over the stove if you prefer.
- Mixing bowl: A large one.
- Utensils: A large spoon for mixing and a smaller spoon or spatula for shaping the bark on the tray.
How to make chocolate pretzel marshmallow bark
Step 1: First, line a baking tray with a sheet of baking paper. This will make it super easy to lift the bark off the tray once it's set.
Step 2: Measure out 40g of salted pretzels. If you like, set aside a few for the topping then crush the rest up into medium-sized chunks. Add them to a large bowl with 50g of mini marshmallows. Again, you can keep a few marshmallows for topping the bark if you like.
Step 3: Break 300g of milk chocolate into segments then melt in a heatproof bowl in the microwave or in a saucepan over low heat on the stove. If you're using the microwave, you'll need to take the bowl out and stir the chocolate every 30 seconds to prevent burning or seizing.
Step 4: Pour the melted chocolate into the bowl with the pretzels and marshmallows. Mix it all together until everything is evenly coated with the melted chocolate.
Step 5: Transfer the mixture to your lined baking tray then use a spoon to shape it into a rectangle. The smaller the rectangle is, the thicker your chocolate bark will be.
Step 6: Add some extra pretzels and marshmallows on top while the chocolate is still wet then pop your bark in the fridge.
Step 7: Leave the bark in the fridge for around 2-3 hours, until the chocolate has fully set. Then peel it off the baking paper and break it into shards. You can also cut it using a knife if you prefer.
Top tips
- Melt the chocolate slowly to prevent burning. If you're using the microwave, take it out every 30 seconds or so and give it a good stir. If you're using the stove, make sure to keep the heat low.
- For thicker bark, you can use an 8x8-inch tin to put the mixture in. Then instead of breaking it with your hands, you can cut it up into shards using a sharp knife.
- Break the pretzels up before you mix them into the melted chocolate. Although fine for the topping, it can be hard to break up the bark neatly if you mix them in whole. They don't have to be too small- I usually just break mine into halves or quarters.
- For a cute edible gift, package your rocky road bark pieces into little clear bags with a tie around the top.
Mix-in and topping ideas
For this bark, you can use any kind of mix-ins that you'd use in a regular rocky road recipe. Here are a few of my favourites:
- Nuts: Any kind! Almonds, walnuts and peanuts go really well with milk chocolate.
- Popcorn: I love adding sweet and salty popcorn to my rocky road and it'd taste great in this bark recipe too.
- Glace cherries: Or dried fruits like apricots and raisins.
- Candy: Try adding pieces of your favourite candy such as Turkish delight, M&Ms or Twix bars.
FAQ
It can last for up to 3 weeks without any toppings. If you add pretzels on top of the bark, they'll start to go soft after 2-3 days. Store it in an airtight container in the fridge or in a cool, dry place such as a kitchen cupboard.
Yes, rocky road bark can be frozen because it's essentially just a chocolate bar. Just pop your pieces into an airtight container and freeze for up to 3 months. Alternatively, you can wrap the whole slab tightly in clingfilm. To defrost it, leave it to sit in the fridge overnight. Do not refreeze.
