I know it's still August but I've been SO ready to start making some Halloween dessert recipes for a while now! Today I'm sharing these adorable chocolate-covered ghost strawberries, a super easy recipe that's a lot of fun to make!
Below you'll find everything you need to know about making the perfect strawberry ghosts, including ingredient notes, step-by-step images and top tips. I hope you find the post useful! If you'd prefer just to skip straight to the condensed version of the recipe, you can find it in the recipe card at the end of the post. Enjoy!
Ingredients
Here's everything you need for Halloween chocolate strawberries...
- Fresh strawberries: Try to ensure your strawberries are as fresh as possible for the best results. The older they are, the more likely the juices will seep through the chocolate and we definitely don't want that!
- Candy melts: I used 'natural white' candy melts (Deco Melts) to coat my strawberries with. You could also use the regular white ones but note that they are not completely bright white- they will make your ghosts look a little yellowish.
- Milk or dark chocolate: For the eyes and mouths. I like to use dark chocolate as it creates more of a contrast against the white strawberries. You can also stick on some edible eyes if you like.
Equipment
Here's a list of all the kitchen tools you'll need to make chocolate-covered strawberry ghosts:
- Baking tray: Or anything you can lay the ghost strawberries with plenty of room, such as some large plates or a chopping board.
- Baking paper: To make it easy to peel the strawberries off once they've set.
- Kitchen roll: To dry your strawberries thoroughly after washing.
- Heatproof bowl: To melt the candy melts. You can also do this in a saucepan if you prefer, over low heat on the stove.
- Spoon: For mixing the candy melts as you're melting them.
- Piping bag: To draw on the eyes and mouths of the ghosts, you'll need a small piping bag. You can use a small writing nozzle if you like but I just cut a very small piece off the tip of the bag. If you want to make things really easy, you can use ready-made writing icing tubes in black or brown.
How to make chocolate covered strawberry ghosts for Halloween
Step 1: Line a large tray with baking paper then set it aside for later.
Step 2: Wash 400g of fresh strawberries and pat them dry with some kitchen roll. Try to get them as dry as you can without squishing them. If there's too much water left on the surface, the coating won't stick well.
Step 3: Place 250g of natural white candy melts into a heatproof bowl. Melt them in the microwave, taking them out to stir them every 30 seconds or so. This will prevent them from seizing up.
Alternatively, place them into a small saucepan and slowly melt them on the stove, stirring gently as you go.
Step 4: One by one, dip your strawberries into the candy melts. Don't worry about shaking off too much excess as it'll be handy to create the ghost 'tails'.
Step 5: Place your Halloween chocolate strawberries onto your lined tray, dragging them slightly to create a 'tail' in front, as pictured below.
Let your strawberries sit at room temperature for around 45 minutes until the candy coating has fully hardened.
Step 6: Melt 50g of milk or dark chocolate then transfer it to a small piping bag with a very small piece of the tip cut off (or you can fit it with a small writing nozzle).
Step 7: Use the chocolate to pipe two eyes and a mouth onto each strawberry. Take your time as it can be a little tricky to keep it neat!
Step 8: Leave your strawberries to sit at room temperature until the milk/dark chocolate has fully set. Then your chocolate ghost strawberries are ready to serve!
Top tips
- Let the candy melts cool for 5 minutes after they've melted. This will help keep your Halloween chocolate strawberries fresher for longer.
- Make sure your strawberries are very dry before you dip them, otherwise the coating won't stick properly.
- Use a bowl or glass that's deep enough to dip the strawberries all the way in one go. There's more chance of the stems breaking off if you have to roll them around to cover them.
FAQ
They're best eaten on the same day that you make them. So if you're having a Halloween party in the evening, you should prepare these the same morning. To prevent condensation and leaking, they should be covered and kept at room temperature, rather than in the fridge.
Chocolate strawberry ghosts are not great for freezing as they will become wet and soft as they defrost, causing leakage and a poor flavour.
Candy Melts can be a little tricky to find in the UK but I usually have no problems getting them from Hobbycraft. If you can't find them, you can use an equal amount of white chocolate instead. Note that white chocolate will give a slight yellow tinge compared to the bright white candy melts.
