This Valentine’s Day rocky road is everything you love about the classic no-bake treat but with a romantic twist! It can be customised to your liking and is great for sharing with your loved ones.

If you've been looking for a vibrant, fun Valentine's Day dessert that both kids and adults can enjoy, this pink Valentine's rocky road is just the thing! The mix of creamy white chocolate, crunchy biscuits, gooey marshmallows, and colourful sweets is simply unbeatable and with its gorgeous pink hue, it’s almost too pretty to eat!

Ingredients
- Jammie Dodgers: These iconic British biscuits add a sweet crunch and a gorgeous pop of pink. If strawberry Jammie Dodgers aren’t available near you, you can use one of the other flavours or any other type of biscuits that you like. Some of my other favourites to use for rocky road are shortbread and digestive biscuits.
- Mini Marshmallows: Essential for that chewy, gooey texture we all love in a rocky road! I used 100g of them.
- Pink or Purple Sweets: These add more colour and a fun variety of textures. Think jelly beans, chewy sweets, or heart-shaped gummies. The more creative you can get, the better! I used a mixture of Swizzel's Love Hearts, Rowntree's Berry Hearts, Drumstick Squashies and Starburst Minis. Be mindful that some will be more difficult to cut through than others and may cause your rocky road slices to crack.
- White Chocolate: This forms the base of the rocky road. Because white chocolate is very finicky, I didn't add any golden syrup or butter as I do with my regular rocky road.
- Pink Gel Food Colouring: This is totally optional, but if you’re going for that romantic vibe, a small amount of pink gel colouring will elevate this dessert to the next level. I recommend using gel over liquid because you won't need as much.
- Neutral Oil: Just a tiny drop of vegetable or sunflower oil is needed if you're making pink chocolate. This will prevent the white chocolate from seizing, which often happens when you colour it.
- Sprinkles: Optional but recommended for the topping. I used heart-shaped sprinkles and mini red and pink balls, along with more Swizzel's Love Heart sweets.
Equipment
- 8x8-inch Tin: This size gives you perfectly thick slices of rocky road. If you don’t have a tin this size, use my cake pan converter to adjust the recipe accordingly. You can also make individual servings in cupcake cases.
- Baking Paper: A non-negotiable if you want to avoid the headache of trying to cut your rocky road out of the bottom of the tin!
- Mixing Bowl: A large one, to mix all of those chunky ingredients together.
- Heatproof bowl: For melting the chocolate in the microwave. Alternatively, you can do this in a saucepan over low heat on the stove.
- Utensils: You'll need a wooden spoon for mixing and I also find a silicone spatula very handy to get every last bit of melted chocolate out of the bowl. You will also need a sharp knife to cut the biscuits and the rocky road slab.

How to make Valentine's Day Rocky Road
Step 1: Start by lining an 8x8-inch tin with baking paper, ready for your mixture to go into. I recommend leaving some hanging over each edge for easy removal later.
Step 2: Chop 1 pack (140g) of Strawberry Jammie Dodgers into medium-sized chunks then put them into a large bowl with 100g of mini marshmallows.
Step 3: Take 4 handfuls of your favourite pink and/or Valentine-themed sweets and put them into the bowl. Mix well to combine.

Step 4: Melt 500g of white chocolate in a microwave-safe bowl or over the stove. Once it's melted, add a small amount of pink gel food colouring and about ¼ teaspoon of oil then mix well until you achieve a smooth, even colour. If you want a bolder colour, you can repeat the process again.
Step 5: Pour the pink chocolate into your bowl and mix everything together until all of the biscuits, sweets and marshmallows are evenly covered.

Step 6: Press the mixture into your tin, working quickly before the chocolate starts to set. Then top with more sweets and Valentine's Day sprinkles.

Step 7: Pop the whole thing in the fridge for 3 hours to set then remove it from the tin, cut it into slices and enjoy!
Top Tips
- If you're having trouble cutting clean slices, dip your knife into boiling water and then dry it immediately before using. The heat will help your knife glide through the chocolate and prevent cracking. This was especially helpful for cutting through the mini Starburst sweets that I used.
- Some mini Jammie Dodgers would make a gorgeous on-theme topping.
- If you prefer a less sweet version, you can use milk or dark chocolate instead of white. Of course, it will look a little different because it won't be pink but you'll still have the colourful sweets and biscuits shining through.
- White chocolate will seize up quickly if you add food colouring without adding a small amount of oil too. Don't skip this!

If you store it in an airtight container in the fridge, it’ll stay fresh for up to a week. Trust me, though- it'll be hard to make it last that long!
You sure can, for up to 3 months. You can either wrap the whole slab tightly in clingfilm or you can freeze individual slices in an airtight container. When you're ready to defrost it, transfer it to the fridge and let it thaw there overnight.
This will happen if you add too much food colouring without any/enough oil. The oil is what will keep the chocolate smooth and runny. White chocolate also starts to harden faster than milk or dark chocolate anyway so it's important to work quickly.

Valentine's Day Rocky Road
Ingredients
- 140 g Strawberry Jammie Dodgers or any other biscuits/cookies that you like (5oz)
- 100 g Mini marshmallows (2 cups)
- 4 Handfuls Pink, red, purple or heart-shaped sweets (note 1)
- 500 g White chocolate (18oz)
- Small Amount Pink gel food colouring (optional, see note 2)
- ¼ to ½ Teaspoon Oil (only if using food colouring)
To top:
- Small Handful Leftover sweets
- 1-2 Tablespoons Valentine's Day cake sprinkles
Instructions
- Line an 8x8-inch tin with baking paper.
- Chop the Jammie Dodgers into medium-sized chunks and add them to a large bowl with the mini marshmallows. Add your chosen sweets and mix everything together.
- Melt the white chocolate. Add the pink gel colouring and the oil and mix well.
- Pour the chocolate into the bowl with the dry ingredients and mix well until everything is evenly coated.
- Press the mixture into your lined tin. Top with more sweets and Valentine's sprinkles while the chocolate is still wet.
- Refrigerate your rocky road for 3 hours until firm then cut into squares and enjoy.

Notes
- The sweets I used were Rowntree's Berry Hearts, strawberries & cream Drumstick Squashies, Swizzels Love Hearts and Starburst Minis. I used about 30-40g of each.
- Colouring the white chocolate pink is optional but if you do, I recommend gel food colouring along with the oil rather than liquid. This will help prevent the chocolate from seizing.
- White chocolate starts to set quite quickly so it's important to work as fast as you can after mixing it into the other ingredients.
- Store in an airtight container in the fridge for up to 1 week.
