If you follow my blog, you might know that I am becoming a little bit of a flapjack connoisseur! I've shared a fair few easy flapjack recipes on the blog, and while my classic recipe is my favourite, I'm always experimenting with new flavour ideas. I thought I'd put them all into one big post so you can come here for inspo whenever you need it! Enjoy!
What can you add to flapjacks?
There are so many options out there but it can be hard to think of them when you're standing in the kitchen with your bowl of oats ready to bake. I almost always forget my ideas unless I write them down first, so here's a handy list for you to refer to!
Chocolate
Chocolate and flapjacks are just such an iconic duo, am I right?! You can stir chocolate chips through the mixture or drizzle melted chocolate over the top after baking. Or both! My favourite options are:
- Dark chocolate chips
- White chocolate chunks
- Cacao nibs for a healthier option
- Milk chocolate drizzle
- Chocolate buttons
Dried fruit
Dried fruit comes in a close second to chocolate for me when it comes to flapjack flavour ideas! They add sweetness and give the bars an extra chew- so good! Here are some ideas:
- Raisins or sultanas
- Cranberry flapjacks
- Chopped dried apricots
- Chopped dates
- Apple pieces
Seeds
One of the most popular flapjack mix-ins, seeds! These add crunch, texture and a nice savoury flavour. Some great options are:
- Pumpkin seeds (I used these in my protein flapjacks)
- Sunflower seeds
- Hemp seeds
- Poppy seeds
Nuts
Just like seeds, nuts are great to add some crunch, balance out the sweetness and add extra protein. They also make flapjacks feel a little more wholesome! Try using:
- Flaked almonds
- Walnut pieces
- Chopped pecans
- Chopped hazelnuts
- Chopped cashews
Freeze-dried fruit powders
Fruit powders are such an easy way to add flavour and colour without changing the texture too much. Just mix a spoonful or two in with the oats before you mix in the wet ingredients.
- Strawberry powder
- Raspberry powder
- Blueberry powder
Citrus Zest
If you want your flapjacks to taste fresh and zingy, adding zest is the way to go!
- Lemon zest for a bold, bright flavour. Check out my lemon drizzle flapjacks.
- Lime zest for a sharper flavour. Tastes lovely with coconut!
- Orange zest for a sweeter, warmer flavour. This goes very well with chocolate!

Flavour Extracts
A little extract goes a long way and can make a big difference to the flavour of your flapjacks. Use sparingly, as some flavours (especially almond) can be quite strong. Try adding:
- Vanilla extract
- Almond extract
- Orange extract
- Coconut extract
- Peppermint extract
Spices
Spices make flapjacks feel warm and cosy, especially during autumn and winter. My favourites are:
- Cinnamon flapjacks
- Ground ginger
- Mixed spice
- Nutmeg
Cocoa Powder
If you like chocolate flapjacks, cocoa powder is a great option. Stir a few tablespoons into the oat mixture for a rich chocolatey flavour. I combined cocoa powder and orange extract to create my Chocolate Orange flapjacks.
Peanut Butter
Peanut butter makes flapjacks rich, soft and gives a strong nutty flavour. Stir it into the wet mixture before adding in the oats. If you fancy trying this flavour, check out my peanut butter flapjack recipe.
Biscoff Spread
Adding Biscoff spread to your flapjack mixture gives it a caramelised biscuit flavour that tastes incredible! If you'd like to give it a go, check out my Biscoff flapjacks recipe.
Desiccated Coconut
Desiccated coconut adds sweetness and chewiness with a subtle tropical flavour. It pairs well with:
- Chocolate (Bounty vibes!)
- Lime zest
- Dried pineapple
- White chocolate chips
Stuffed Flapjacks
If you really want to level up your flapjacks, try stuffing them with a gooey filling. Press half of the flapjack mixture into your tin, spread over your filling of choice, then press the remaining mixture on top before baking. Some delicious filling ideas are:
- Nutella flapjacks
- Pistachio spread
- Hazelnut creme
- Peanut butter
- Biscoff spread
- Jam
- Caramel
Sweets and candies
These are great for seasonal flavours when Easter and Christmas roll around! Here are some ideas you can try:
- Mini Egg flapjacks
- Smarties or M&Ms
- Rolos
- Ferrero Rocher
- Honeycomb pieces
- Mini peanut butter cups
Tips For Adding Mix-Ins To Flapjacks
Here are a few quick tips to ensure you get the best results:
- Don't overload the mixture as this may cause the flapjacks may crumble. Use around 80-120g total mix-ins or toppings per batch.
- Chop larger mix-ins such as walnuts into smaller pieces.
- Add chocolate chunks after the liquid mixture has cooled slightly to stop them from melting when you add them to the bowl.

That's all for now! I hope you like my flapjack flavour ideas. Please let me know if you have any other suggestions that can be added to the list by leaving a comment below. Enjoy!
