This Twix rocky road is so easy to make that you won't even need to turn your oven on! It's sweet and crunchy, packed full of mini marshmallows, Twix pieces and even some sweet and salty popcorn!

I don't know about you, but I can't think of anything better than chocolate, caramel and shortbread all combined into one dessert. These Twix rocky road bars have it all- they're sweet, salty, chewy and crunchy, and they are surprisingly easy to make (and also very difficult to resist).
With only 6 ingredients and less than 10 minutes of prep time, you can quickly whip these babies up for your next bake sale, party snack or afternoon sweet treat. They're sure to be a hit with both kids and adults!

Ingredient notes
- Chocolate: Semi-sweet dark chocolate will work best for this recipe- anything that's around 40-50% cocoa solids. Milk chocolate contains more sugar and will cause the mixture to split.
- Golden syrup: Golden syrup adds extra sweetness and helps the chocolate and butter to combine properly.
- Butter: Use unsalted butter for this recipe- you can add a pinch of salt separately if you want. We'll melt the butter and add it in with the chocolate, making your rocky road easier to cut later on.
- Twix bars: The star of the show, the humble Twix bar! I omitted the digestive biscuits that I usually use in my rocky road recipes because there's plenty of shortbread in the Twix bars. If you prefer, you can swap some of them out for a handful of roughly crushed digestive biscuits.
- Mini marshmallows: I used pink and white marshmallows. These add a delicious chew and a pop of colour.
- Popcorn: I like to add sweet and salty popcorn to give this dessert an interesting texture and flavour. Feel free to swap this out for any other rocky road addition that you like, such as pretzels, glace cherries or nuts... the world is your oyster!
Equipment
- Baking tin and baking paper: An 8x8x3-inch tin will get you perfectly thick slices. I recommend leaving a little bit of baking paper hanging over each edge so you can just lift it out later on.
- Utensils: You'll need a wooden spoon, a sharp knife, and something to press the mixture firmly into the tin. I typically use the bottom of a cup, a small metal spoon or a rubber spatula.
- Large bowl: For mixing everything together.
- Saucepan: To melt the butter and chocolate. If you have a heatproof bowl, you can do this in the microwave instead. Just make sure to stir it often to prevent any mishaps.
- Kitchen scales: I don't typically use imperial measurements in my recipes so it's best to have a kitchen scale to hand.

How to make Twix rocky road
Step 1: Start by lining an 8x8-inch tin with baking paper so that it's ready for your mixture to go in.
Step 2: Next, melt 300g of chocolate with 100g of butter and 3 tablespoons of golden syrup. You can do this in a saucepan over low heat on the stove or you can do it in a heatproof bowl in the microwave. Make sure to stir it often (and gently).

Once it's melted, set it aside to cool for a few minutes so it doesn't melt the marshmallows in the next step.
Step 3: Chop 300g of Twix bars into medium-sized chunks and add them to a large bowl along with 100g of mini marshmallows and 30g of sweet and salty popcorn. Mix to combine.

Step 3: Pour the melted chocolate and butter mixture into the bowl and mix well. Make sure that everything is covered in the chocolate.
Step 4: Transfer the mixture to your lined tin and press it firmly into place. Then pop it into the fridge for around 3 hours, until the chocolate is firm.

Step 5: Remove your Twix rocky road from the tin and cut it into slices. I cut mine into 16 but you can make your slices as big or as small as you like.
Substitutions
- You can replace some of the Twix bars with roughly crushed shortbread or digestive biscuits for a little extra crunch.
- Popcorn can be replaced with any other rocky road mix-in that you like such as pretzels or glace cherries.
- Golden syrup can be swapped out for agave nectar or honey.
FAQ
This will last for around 2 weeks in an airtight container at room temperature but it can last for up to 3 weeks in the fridge! I do recommend storing it in the fridge for the best texture.
You sure can. Place your slices into airtight containers (separating them with baking paper to prevent sticking if you're stacking them up) and freeze for up to 3 months. When you want to enjoy them, let them thaw overnight in the fridge or at room temperature for a few hours. Do not refreeze.
Rocky road can be a little tricky to cut neatly sometimes but you can solve this by using a warm knife. Simply run your knife under boiling water then dry it thoroughly immediately before cutting.

- Melt the chocolate, butter and golden syrup together in a saucepan then set aside to cool for a minute or two.
- Chop the Twix bars into medium-sized chunks and add them to the bowl along with the popcorn and mini marshmallows. Mix to combine.
- Pour the chocolate mixture into the bowl and mix well. Transfer the mixture to your lined tin and press it down firmly into place.
- Refrigerate your rocky road for 3 hours then cut into squares and enjoy!
