Ingredients

Digestive biscuits

Butter, melted
(weigh it out then melt it)

Condensed milk
(120ml)

Lemon extract

Instructions
Line an 8x8-inch tin with baking paper.
Blitz the biscuits into fine crumbs then mix them together with the melted butter, the condensed milk and the lemon extract.
Spoon the mixture into your lined tin and press it down firmly using the back of a spoon.
Mix the icing sugar and lemon juice to make the icing.
Transfer 1-2 tablespoons of icing to a small bowl and stir in yellow food colouring.
Spread the white icing over the biscuit base then swirl the yellow icing in using a toothpick.
Top with lemon zest.
Refrigerate the whole thing for 4 hours then cut into slices and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 1 week.
If your icing is too thick, add more lemon juice. If it's too thin, add more icing sugar.
