Lemon Biscuit Slice (No-Bake)

A fun, no-bake traybake that tastes just like lemon drizzle cake!

Ingredients

  • 450 g Digestive biscuits
  • 120 g Butter, melted (weigh it out then melt it)
  • 150 g Condensed milk (120ml)
  • 3 Teaspoons Lemon extract

Topping

  • 200 g Icing sugar
  • 2-3 Tablespoons Lemon juice
  • Few Drops Yellow food colouring (optional)
  • 2-3 Tablespoons Lemon zest

Instructions

  • Line an 8x8-inch tin with baking paper.
  • Blitz the biscuits into fine crumbs then mix them together with the melted butter, the condensed milk and the lemon extract.
  • Spoon the mixture into your lined tin and press it down firmly using the back of a spoon.
  • Mix the icing sugar and lemon juice to make the icing.
  • Transfer 1-2 tablespoons of icing to a small bowl and stir in yellow food colouring.
  • Spread the white icing over the biscuit base then swirl the yellow icing in using a toothpick.
  • Top with lemon zest.
  • Refrigerate the whole thing for 4 hours then cut into slices and enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 1 week.
  • If your icing is too thick, add more lemon juice. If it's too thin, add more icing sugar.
